Choose the method
Pan-frying uses a thin film of oil and works for eggs, fish, and tofu. Shallow-frying brings oil partway up the food for cutlets and fritters. Deep-frying surrounds food in oil and calls for a sturdy pot, a thermometer, and more careful setup.
Control the heat
Preheat the vessel, then add oil. Food should sizzle steadily on contact without violent spattering or smoking oil. A thermometer is the reliable way to manage deep-frying; visual cues are only a backup.
Dry, space, and wait
Surface moisture fights browning and can cause dangerous splatter. Pat food dry, leave room between pieces, and let a crust form before turning.
Finish for crunch
Lift fried food onto a rack to let steam escape. Season while hot. Keep water away from hot oil, never leave it unattended, and allow oil to cool fully before handling or disposal.
Good frying is repeatable. Start with one small change next time you cook and notice what it does.
