Start with the food

Neutral oils are flexible when you want the food and seasoning to lead. More flavorful oils can be useful for gentler pan-frying, but the flavor should suit the dish.

Watch the oil, not just the label

If oil smokes, reduce heat and reset. Freshness, refinement, and the pan all matter; a stated smoke point is not a substitute for attention.

After frying

Let oil cool completely. Strain reusable oil only if it has not burned or taken on off aromas, store it safely, and follow local rules for disposal. Never pour oil down a drain.

Good frying is repeatable. Start with one small change next time you cook and notice what it does.
