Why are my homemade french fries limp?

Limp fries usually come from skipping the two-stage fry, leaving surface starch and water on the potatoes, or frying a crowded batch in oil that is too cool. A first fry cooks the inside, a rest dries the surface, and a hotter second fry builds the crust.

Likely causes, and how to tell them apart

  1. Only one fry

What you see: Fries were cooked through but never developed a crisp shell, or they browned before the center softened.

The fix: Follow the classic fries method: a gentler first fry to cook the inside, a rest, then a hotter second fry for the crust.

  2. Wet or starchy potatoes

What you see: The sticks clumped, oil spattered, and the surface looked gummy.

The fix: Rinse the cut potatoes until the water runs clear, then dry them thoroughly. Water in the oil also spatters, so dry well.

  3. Crowding

What you see: The oil stopped bubbling hard and the fries came out pale and soft.

The fix: Fry a single loose layer at a time and let the oil climb back to temperature between batches.

  4. Steam after frying

What you see: Crisp in the pot, soft within minutes in a bowl or paper bag.

The fix: Salt while hot, serve right away, and keep fries on a rack until they hit the table.

Fix it now

  • Limp fries that are already cooked can be spread on a rack and returned to a hot oven or air fryer for a few minutes.

Next time

  • Cut sticks to an even size so they cook at the same rate.
  • Rest between fries so the surface can dry.
  • In an air fryer, spread the fries in a single layer and shake them partway through. The air fryer chart lists the sourced basket rule.

Quick questions

Do I need to soak the potatoes?
Rinsing removes surface starch and helps fries separate. Dry them well before they go in the oil.
Why are my air fryer fries limp?
Most often the basket is overloaded. Air has to move around each stick to dry the surface. Cook in smaller batches and shake.
