Why is my frying oil smoking?
Oil smokes when it gets hotter than it can handle. Turn the heat off and let the pot cool where it is. Common causes are a burner set too high, an oil with a low smoke point, food debris burning in the pot, and oil that has broken down from earlier batches.
Likely causes, and how to tell them apart
The burner is too high
What you see: Thermometer reads well above the recipe temperature and still climbing.
The fix: Turn the heat off, move the pot off the burner if it is safe to do so, and let it cool. Resume at lower heat and adjust in small steps.
The oil is a poor match for the temperature
What you see: Smoke appears even at a normal frying temperature.
The fix: Pick a neutral oil that is suited to frying. The oil guide explains what to look at and why one oil is not right for every food.
Burnt bits are in the pot
What you see: Smoke rises from the bottom, and dark flecks float or settle.
The fix: Strain out crumbs between batches. Loose breading and flour burn long before the oil does.
The oil is worn out
What you see: It is dark, thick, foamy, or smells stale or sharp.
The fix: Replace it. Old oil smokes at a lower temperature than fresh oil.
Fix it now
- Turn the heat off. Do not add water, do not carry the pot, and do not put a wet lid on it.
- Open a window or run the exhaust fan, and wait until the oil has cooled before moving or straining it.
- If flames appear, put on a lid only if you can do so safely, and leave and call emergency services if a fire grows.
Next time
- Use a thermometer rather than the dial, and bring oil up slowly.
- Strain debris between batches.
- Do not walk away from heating oil.
Quick questions
- Is smoking oil still safe to use?
- If it smoked briefly and then settled, it may be usable, but it has been stressed. If it smells acrid, looks very dark, or smokes again quickly, discard it.
- What should I do if the oil catches fire?
- Never use water. Turn off the heat if you can do so safely, and leave and call emergency services if the fire grows. The frying safety guide has the full setup.
