Why does frying oil foam or boil over?

Oil foams and surges when water hits it. Wet food, ice crystals, a pot filled too high, or old oil that has broken down can all make it rise fast. Lower the food slowly, dry it first, and never fill the pot more than it can safely hold once food is added.

Likely causes, and how to tell them apart

  1. Water on or in the food

What you see: Violent spitting the moment food touched the oil.

The fix: Pat food thoroughly dry. Frozen food should be handled according to its package directions, because ice crystals turn to steam and surge.

  2. Too much oil in the pot

What you see: The level rose near the rim as soon as food went in.

The fix: Fill only to the safe limit, leaving generous headroom, because adding food raises the level and bubbling makes the oil expand further.

  3. Food lowered too fast

What you see: A big gush as the whole batch went in at once.

The fix: Lower food gently and away from you, ideally with a spider or basket, and in small batches.

  4. The oil is old

What you see: It foams easily, smells stale, and looks dark and thick.

The fix: Replace it. The used oil guide covers when to strain and when to discard.

Fix it now

  • Stop adding food and lower the heat or turn it off. Let the foaming settle before you continue.
  • Do not try to skim or move a surging pot. Wait.
  • Never add water to hot oil.

Next time

  • Dry everything and keep batches small.
  • Leave generous headroom in the pot.
  • Work with a spider or basket, and keep your face and hands back.

Quick questions

Why does it foam more with some foods?
Foods that carry a lot of water, such as battered vegetables or anything with ice on it, release more steam. Drying and small batches help.
Can I stop it with salt or flour?
Do not throw anything into surging oil. Turn off the heat, wait, and follow the frying safety guide.
