Getting it right
- Preheat the air fryer to 385°F.
- Pat the food dry before any oil or coating. Surface water has to steam off before anything can brown.
- Oil: toss with 1 tablespoon olive oil.
- Load: straight into the preheated basket, crisper plate removed.
- Cook 12 min; shake halfway through.
- It is ready when golden brown and crisp.
Why the basket matters more than the dial. An air fryer is a small convection oven: crisping comes from hot air moving across every surface. Pile the food up and the air cannot reach the middle, so it steams. One layer, a shake at the halfway point and a dry surface do more for the crunch than another five minutes.

USDA warns that an overfilled basket cooks unevenly and can leave food undercooked.

- A light coat of oil, never a pool of itCOSORI says a small amount of oil makes food crisper and caps it at 2 tablespoons; Instant says to spray food lightly rather than pour oil into the pot. An air fryer is not a deep fryer: never fill the basket with oil.
