Air fryer jalapeño poppers

Getting it right
- Set the air fryer to 375°F. This source does not preheat; if your model has a preheat cycle, a few minutes will not hurt.
- Size and prep: jalapeños halved lengthwise, seeds and ribs removed.
- Pat the food dry before any oil or coating. Surface water has to steam off before anything can brown.
- Oil: panko topping mixed with melted butter.
- Load: filling side up.
- Cook 17–20 min.
- It is ready when the crumbs are golden brown and the peppers are soft.
Why the basket matters more than the dial. An air fryer is a small convection oven: crisping comes from hot air moving across every surface. Pile the food up and the air cannot reach the middle, so it steams. One layer, a shake at the halfway point and a dry surface do more for the crunch than another five minutes.
