Air fryer shrimp

Air-fry shrimp at 375°F (190°C) for 6–8 min, until the spice coating is lightly browned and the shrimp turn pink. Times vary by model and basket size, so treat them as a starting point. Shrimp, lobster and crab: cook until the flesh is pearly and opaque.

Getting it right

  1. Preheat the air fryer to 375°F.
  2. Size and prep: 26–30 per pound, peeled and deveined.
  3. Pat the food dry before any oil or coating. Surface water has to steam off before anything can brown.
  4. Oil: toss in 2 tablespoons seasoned olive oil per pound.
  5. Load: single layer on a greased tray; crowded shrimp will not crisp, so cook in batches.
  6. Cook 6–8 min.
  7. It is ready when the spice coating is lightly browned and the shrimp turn pink.
Why the basket matters more than the dial. An air fryer is a small convection oven: crisping comes from hot air moving across every surface. Pile the food up and the air cannot reach the middle, so it steams. One layer, a shake at the halfway point and a dry surface do more for the crunch than another five minutes.

Basket rules that apply to everything

  • One layer, three-quarters full at mostInstant’s Vortex Plus manual says to place food in a single layer, not to stack it, and not to fill a basket more than three-quarters full, because the hot air has to move through the food. USDA warns that an overfilled basket cooks unevenly and can leave food undercooked.
  • Shake or flip at the halfway pointCOSORI’s Pro LE manual says to shake or flip food once halfway through, and that without it food may not crisp or cook evenly. University of Illinois Extension gives the same advice: shake the basket or turn food with tongs midway.
  • Preheat for about 3 minutesNinja’s AF101 quick start guide says to preheat for 3 minutes, and Illinois Extension says air fryers typically preheat in about 3. COSORI recommends preheating before food goes in.
  • A light coat of oil, never a pool of itCOSORI says a small amount of oil makes food crisper and caps it at 2 tablespoons; Instant says to spray food lightly rather than pour oil into the pot. An air fryer is not a deep fryer: never fill the basket with oil.
