Getting it right
- Preheat the air fryer to 400°F.
- Size and prep: haddock or cod fillets in a flour, egg and cornflake coating.
- Pat the food dry before any oil or coating. Surface water has to steam off before anything can brown.
- The source adds no oil.
- Load: single layer in the basket.
- Cook 8–10 min; turn halfway through.
- It is ready when lightly browned and just beginning to flake with a fork.
- Check the thickest piece with an instant-read thermometer. Fish: 145°F (63°C), or until the flesh is opaque and separates easily with a fork.
Why the basket matters more than the dial. An air fryer is a small convection oven: crisping comes from hot air moving across every surface. Pile the food up and the air cannot reach the middle, so it steams. One layer, a shake at the halfway point and a dry surface do more for the crunch than another five minutes.

- One layer, three-quarters full at mostInstant’s Vortex Plus manual says to place food in a single layer, not to stack it, and not to fill a basket more than three-quarters full, because the hot air has to move through the food. USDA warns that an overfilled basket cooks unevenly and can leave food undercooked.
- Shake or flip at the halfway pointCOSORI’s Pro LE manual says to shake or flip food once halfway through, and that without it food may not crisp or cook evenly. University of Illinois Extension gives the same advice: shake the basket or turn food with tongs midway.

- A light coat of oil, never a pool of itCOSORI says a small amount of oil makes food crisper and caps it at 2 tablespoons; Instant says to spray food lightly rather than pour oil into the pot. An air fryer is not a deep fryer: never fill the basket with oil.
