How to fry hash browns

Pan-fry hash browns over medium-high heat for about 5 min + 3–5 min, until the bottom is golden and crispy. Treat the time as a starting point: piece thickness, your pan and how hot your burner runs all change it, so go by the color and the cue rather than the clock.

Getting it right

  1. Heat oil and butter on a griddle or skillet over medium-high heat until the butter melts.
  2. Pack the potatoes into a patty, cover and cook until the edges start to turn golden, about 5 minutes.
  3. Press the top down with a spatula, season and flip. Cook uncovered until the bottom is golden and crispy, 3 to 5 minutes more.
