How to fry bacon

Pan-fry bacon over medium heat for about 8–12 min (start in a cold pan, single layer; turn as needed), until it is as crisp as you like. Treat the time as a starting point: piece thickness, your pan and how hot your burner runs all change it, so go by the color and the cue rather than the clock.

Getting it right

  1. Lay the strips in a cold skillet without overlapping. Do not preheat the pan and do not add oil; the bacon renders its own fat.
  2. Set the burner to medium. Starting cold lets the fat render slowly so the strips cook evenly.
  3. Turn the strips as needed until they are as crisp as you like, 8 to 12 minutes.
  4. Drain well on a paper-towel-lined plate.
