Air fryer pork chops
Air-fry pork chops at 375°F (190°C) for 12–15 min, turn and spritz again halfway through, until golden brown and 145°F in the center. Times vary by model and basket size, so treat them as a starting point and confirm with a food thermometer. Whole cuts of beef, pork, veal and lamb: 145°F (63°C), then rest for 3 minutes.

Getting it right
- Preheat the air fryer to 375°F.
- Size and prep: breaded boneless loin chops, about 6 oz each.
- Pat the food dry before any oil or coating. Surface water has to steam off before anything can brown.
- Oil: spritz with cooking spray.
- Load: in batches as needed, single layer.
- Cook 12–15 min; turn and spritz again halfway through.
- It is ready when golden brown and 145°F in the center.
- Check the thickest piece with an instant-read thermometer. Whole cuts of beef, pork, veal and lamb: 145°F (63°C), then rest for 3 minutes.
Why the basket matters more than the dial. An air fryer is a small convection oven: crisping comes from hot air moving across every surface. Pile the food up and the air cannot reach the middle, so it steams. One layer, a shake at the halfway point and a dry surface do more for the crunch than another five minutes.

- One layer, three-quarters full at mostInstant’s Vortex Plus manual says to place food in a single layer, not to stack it, and not to fill a basket more than three-quarters full, because the hot air has to move through the food. USDA warns that an overfilled basket cooks unevenly and can leave food undercooked.

- A light coat of oil, never a pool of itCOSORI says a small amount of oil makes food crisper and caps it at 2 tablespoons; Instant says to spray food lightly rather than pour oil into the pot. An air fryer is not a deep fryer: never fill the basket with oil.
