Getting it right
- Set the air fryer to 380°F. This source does not preheat; if your model has a preheat cycle, a few minutes will not hurt.
- Size and prep: 4-inch pie-crust rounds, 1/3 cup filling each.
- Oil: grease the basket; egg wash and olive oil spray on top.
- Load: a few at a time, without overcrowding.
- Cook 8 min.

Why the basket matters more than the dial. An air fryer is a small convection oven: crisping comes from hot air moving across every surface. Pile the food up and the air cannot reach the middle, so it steams. One layer, a shake at the halfway point and a dry surface do more for the crunch than another five minutes.
