Air-fryer zucchini fries

A panko crust keeps the outside crunchy while the zucchini inside stays tender — no oil pot needed.

Let's make it.

  1. Trim the ends from each zucchini and cut them into sticks roughly ¼ inch wide and 3 inches long. Pat them very dry with paper towels — surface moisture steams the coating rather than letting it crisp.
  2. Set out three shallow dishes: flour in the first; eggs beaten with the water in the second; panko mixed with garlic powder, paprika and salt in the third.
  3. Coat each stick in flour and shake off the excess. Dip it in egg, letting the excess drip off. Press it firmly into the panko, turning to coat all sides.
  4. Preheat the air fryer to 375°F. Lightly mist the basket with cooking spray.
  5. Arrange the coated sticks in a single layer with a little space between them. An overcrowded basket will not crisp them — cook in two or three batches rather than stacking.
  6. Mist the tops lightly with cooking spray. Air-fry for 6 to 8 minutes, then flip each piece and cook for 3 to 5 minutes more, until the panko is golden brown and the edges look dry and crunchy.
  7. Start checking a minute or two before the lower end of the time range: zucchini sticks vary with appliance wattage, cut size and how wet the squash was. A light golden colour is enough — extended cooking makes them soft inside.
  8. Serve immediately with marinara or ranch on the side.
The little thing that matters

Zucchini releases moisture as it cools, so serve the fries as soon as they come out of the basket while the panko is still crisp.

For meat and seafood, use a food thermometer and the current safe minimum temperature chart to verify doneness. Never pour oil into the air fryer basket; a light coat on the food is enough.
